Ingredients
Chicken breasts – boneless and skinless
Carrots
celery & onion
Garlic
Chicken broth
Italian seasoning
Salt & black pepper
Cream of chicken soup
Heavy cream (or half-and-half)
Potato gnocchi
Fresh baby spinach
Parmesan cheese
Parsley
Instructions
- Place the chicken breasts in the crockpot.
- Add chopped carrots, celery, onion, and minced garlic.
- Pour in the chicken broth and sprinkle with Italian seasoning, salt, and pepper.
- Add the cream of chicken soup and heavy cream; stir gently to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
- Once cooked, shred the chicken in the pot; return to the soup.
- Stir in the potato gnocchi and fresh spinach; cook for an additional 30 minutes on low or until the gnocchi are cooked.
- Serve hot, garnished with Parmesan cheese and parsley.
Notes
For a thicker soup, you can reduce the amount of chicken broth or add more cream. Adjust seasoning to taste.
