Ingredients
Chicken breasts
Yellow onion
Carrots
Celery
Garlic
Fresh rosemary sprigs
Bay leaf
Salt
Black pepper
Chicken broth
Fusilli noodles
Fresh parsley
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add chopped yellow onion, sliced carrots, diced celery, minced garlic, fresh rosemary, bay leaf, salt, and black pepper on top of the chicken.
- Pour in the chicken broth, ensuring the ingredients are covered.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and return it to the soup.
- Add in the fusilli noodles and cook on high for an additional 20 minutes, or until the noodles are tender.
- Serve hot, garnished with fresh parsley if desired.
Notes
For added flavor, consider sautéing the vegetables before adding them to the crockpot. Feel free to use egg noodles or rotini instead of fusilli.
