Instructions
- In your crockpot, combine the carrots, celery, onion, and garlic.
- Pour in the vegetable broth, diced tomatoes, and tomato paste, and stir to combine.
- Add the Parmesan rind, salt, pepper, oregano, rosemary, and basil. Mix well.
- Stir in the kidney beans, cannellini beans, and green beans.
- Cover and cook on low for about 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the ditalini pasta.
- Stir in the baby spinach just before serving.
