Description
These Dan Dan Noodles are a spicy and flavorful dish featuring a combination of ground pork, homemade chili oil, and a tangy sauce, served over fresh wheat noodles and topped with peanuts and green onions.
Ingredients

Chili Oil
- 1/4 cup vegetable oil
- 2 tbsp toasted sesame oil
- 1 1/2 tbsp red chili flakes
- 1/2 tsp Sichuan peppercorn powder
- 1/2 tsp Chinese five-spice powder
- 1 star anise (optional)
Dan Dan Sauce
- 1/3 cup reduced sodium chicken broth (warmed)
- 1/4 cup soy sauce
- 3 tbsp Chinese sesame paste
- 1 1/2 tbsp rice wine or dry sherry
- 1 tbsp sugar
- 1 tsp Sichuan peppercorn powder
- 1/2 tsp ground ginger
- 2 garlic cloves (minced)
- 3–4 tbsp chili oil
Pork & Preserved Veggies
- 1 tbsp vegetable oil
- 8 oz ground pork
- 2 tsp hoisin sauce
- 2 tsp rice wine or dry sherry
- 2 tsp dark soy sauce
- 1/2 tsp Chinese five-spice powder
- 1/2 cup sui mi ya cai
Noodles & Toppings
- 1 lb fresh wheat noodles
- 1 bunch choy sum (chopped)
- Green onions (chopped)
- Toasted peanuts (chopped)
Instructions
- Make Chili Oil:
Heat vegetable oil and sesame oil over low heat. Add chili flakes, Sichuan pepper, five-spice, and star anise. Let it infuse until fragrant, then cool. - Prepare Sauce:
In a bowl, whisk together chicken broth, soy sauce, sesame paste, rice wine, sugar, garlic, ginger, and chili oil. - Cook Pork:
Heat oil in a pan, cook ground pork until browned. Add hoisin sauce, soy sauce, rice wine, and five-spice. Stir in sui mi ya cai. - Cook Noodles & Greens:
Boil noodles according to package instructions. Blanch choy sum briefly. - Assemble:
Toss noodles with sauce, top with pork mixture, greens, peanuts, and green onions.
Notes
- Adjust chili oil to control spice level
- Substitute pork with tofu or mushrooms for a vegetarian version
- Use peanut butter if sesame paste isn’t available
