Description
This Daniel Fast Black Bean Soup is an easy and hearty meal that’s perfect for any occasion. Packed with flavor from fresh vegetables, spices, and topped with creamy avocado and zesty lime, it’s both nutritious and satisfying.
Ingredients
2 tablespoons olive oil
1 medium yellow onion diced
3 cloves garlic minced
2 medium carrots peeled and diced
2 celery stalks diced
2 cans black beans drained and rinsed
4 cups low-sodium vegetable broth
1 can diced tomatoes no salt added
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 bay leaf
1/4 teaspoon red pepper flakes
1–2 ripe avocados sliced or diced
2 limes cut into wedges
Fresh cilantro leaves
diced fresh tomatoes or jalapeño optional
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, carrots, and celery, cooking for another 5-7 minutes until they begin to soften.
- Stir in the black beans, vegetable broth, diced tomatoes, cumin, smoked paprika, sea salt, black pepper, bay leaf, and red pepper flakes (if using). Bring to a boil.
- Reduce heat and simmer for 20-25 minutes, allowing the flavors to meld together. Remove the bay leaf before serving.
- Serve hot, garnished with sliced avocado, lime wedges, and fresh cilantro if desired.
Notes
This soup can be easily customized with additional vegetables or spices according to your taste. Leftovers can be stored in the refrigerator for up to 3 days.
