Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and chop the carrots, red onion, sweet potato, and brussel sprouts into bite-sized pieces.
  • In a large bowl, toss the chopped veggies with olive oil, salt, and pepper until evenly coated.
  • Spread the vegetables on a baking sheet in a single layer and roast for about 25 minutes, or until tender and golden brown.
  • While the veggies are roasting, prepare the glaze by whisking together the date syrup, balsamic vinegar, and Dijon mustard in a small bowl.
  • After 25 minutes, remove the veggies from the oven and drizzle the date syrup glaze over them. Toss to combine.
