Ingredients
1 cup unsalted butter softened

2 tsp. vanilla extract 10mL

1 cup semi-sweet chocolate chips
½ cup quick oats
18 chocolate sandwich cookies such as Oreos
3/4 cup unsalted butter melted
½ cup brown sugar 100g
½ cup granulated sugar 100g
2 tsp. vanilla extract 10mL
2/3 cup cocoa powder 65g
½ cup all-purpose flour 60g
2 tsp. espresso powder
½ tsp. kosher salt
½ tsp. baking powder
2 eggs
½ cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, kosher salt, baking powder, baking soda, chocolate chips, and oats. Gradually add this dry mixture to the wet mixture, stirring until just combined.
- Spread half of the cookie dough mixture evenly into the prepared baking pan.
- Layer the chocolate sandwich cookies over the cookie dough, spacing them evenly.
- In another bowl, melt the unsalted butter for the brownie layer. Stir in the brown sugar and granulated sugar until well mixed.
- Add in the vanilla extract, cocoa powder, flour, espresso powder, kosher salt, and baking powder, mixing until smooth.
- Finally, add the eggs and semi-sweet chocolate chips, stirring until combined.
- Pour the brownie batter over the cookie and Oreo layers, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before cutting into squares and serving.
Notes
For a richer flavor, add crushed Oreos into the brownie mix. Store leftovers in an airtight container for up to 3 days.
