Delicious Slow Cooker Garlic Butter Chicken & Veggies is a hearty and comforting dish made with tender chicken thighs, vibrant vegetables, and a rich garlic butter sauce that will make your taste buds dance.


Ingredients

2 pounds boneless

skinless chicken thighs

1 ½ pounds small red potatoes

1 pound carrots

1 large yellow onion

1 head of garlic

½ cup unsalted butter

1 cup chicken broth

2 tablespoons fresh parsley

1 tablespoon dried Italian seasoning

1 teaspoon dried thyme

½ teaspoon smoked paprika

salt and freshly ground black pepper to taste

2 tablespoons cornstarch + 2 tablespoons cold water (optional)


Instructions

  • Melt the unsalted butter in a small saucepan and mix in the minced garlic, Italian seasoning, dried thyme, smoked paprika, salt, and pepper. Stir well and set aside.
  • In the slow cooker, place the boneless chicken thighs, small red potatoes, chopped carrots, and diced yellow onion.
  • Pour the garlic butter mixture over the chicken and veggies, followed by the chicken broth. Toss everything to combine evenly.
  • Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is cooked through and the vegetables are tender.
  • If you prefer a thicker sauce, mix the cornstarch with cold water to form a slurry and add it to the slow cooker in the last 30 minutes of cooking, stirring to combine.
  • Once cooked, garnish with freshly chopped parsley before serving.

Notes

For best results, use fresh ingredients; substituting chicken breasts may result in a drier dish. The optional cornstarch slurry will help thicken the sauce if desired.
