Ingredients

3 boneless
skinless chicken breasts (about 1.5 lbs)
2 tbsp olive oil
4 cloves fresh garlic
minced
1 cup sweet corn (fresh or frozen)
1 cup diced bell peppers (any color)
Juice of 2 limes
1 cup sour cream
2 tsp chili powder
4 cups cooked rice
Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and chili powder. Add to the skillet and cook for about 6-7 minutes per side until golden brown and cooked through. Remove and let rest, then slice.
- In the same skillet, add minced garlic, corn, and diced bell peppers. Sauté for about 5 minutes until the vegetables are tender. Squeeze lime juice over the mixture and stir to combine.
- To assemble, place a serving of cooked rice in a bowl, top with chicken, and add the corn and pepper mixture. Drizzle with sour cream before serving.
Notes
For a spicier kick, you can add chopped jalapeños or a dash of hot sauce. Fresh cilantro can also be sprinkled on top for added flavor.
