2 medium sweet potatoes
2 tbsp unsalted almond butter
1/4 to 1/2 cup unsweetened vanilla almond milk
1 tsp vanilla extract (I use Simply Organic vanilla extract)
2 tbsp maple syrup (grade A amber rich for best flavor)
1/2 tsp ground cinnamon
2 tbsp ground flaxseed
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and prick the sweet potatoes with a fork, then bake in the preheated oven for about 30 minutes or until tender.
- Once the sweet potatoes are done, let them cool slightly before peeling and placing the flesh in a bowl.
- Add almond butter, almond milk, vanilla extract, maple syrup, ground cinnamon, and flaxseed to the sweet potato. Mix until creamy and well combined.
- Serve in bowls and enjoy your Sweet Potato Breakfast Bowl warm, garnished with additional toppings if desired.
