Instructions

  • In a large bowl, combine pineapple juice, soy sauce, honey, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Whisk until well combined.
  • Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  • Preheat your oven to 375°F (190°C). Remove the chicken from the marinade and reserve the marinade for later use.
  • Place the chicken in a baking dish and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • While the chicken is baking, prepare the sauce by bringing the reserved marinade to a boil in a saucepan. Mix cornstarch with water to create a slurry, then add to the boiling marinade, stirring until thickened.
  • Once the chicken is cooked, remove it from the oven and let it rest for a few minutes before slicing.
  • Serve the chicken slices topped with the thickened sauce, grilled pineapple slices, chopped onions, and a sprinkle of sesame seeds.
