1 box white or yellow cake mix (13.25 oz.)
¼ cup flour
8 tablespoons unsalted butter
melted and cooled
1 large egg
1 large egg yolk
2 teaspoons pure vanilla extract
¼ cup sugar
for rolling
1 cup white chocolate chips
¼ cup heavy cream
58 M&Ms or 2 per cookie cup
Instructions
- Preheat your oven to 350°F (175°C) and greas a muffin tin.
- In a large bowl, combine the cake mix and flour.
- Stir in melted butter, egg, egg yolk, and vanilla extract until a dough forms.
- Roll dough into small balls and then roll in sugar before placing in the muffin tin.
- Bake for 10-12 minutes until lightly golden.
- While baking, prepare ganache by heating heavy cream to a simmer and pouring over white chocolate chips, stirring until smooth.
- Once cookie cups are out of the oven, use a small spoon to create an indentation in each cup while warm.
- Fill each cup with the white chocolate ganache and top with M&Ms.
- Allow to cool completely before serving.
Notes
For best results, let the ganache cool slightly before filling the cookie cups. You can use pastel M&Ms for a more festive look.
