3 tablespoons Blue Jell-O powder

3 tablespoons Strawberry or cherry Jell-O powder

3 tubs (8 oz each) Cool Whip

⅓ cup Boiling water for blue Jell-O

½ cup Ice cold water for blue Jell-O

½ cup Boiling water for red Jell-O

½ cup Ice cold water for red Jell-O

Cadbury Pastel Mini Eggs (optional)


Instructions

  • Prepare the cheesecake mix according to package instructions, typically by mixing with the required milk and butter.
  • Spray the pan with cooking spray and pour half of the cheesecake mixture into the pan.
  • In a separate bowl, dissolve the blue Jell-O powder in ⅓ cup boiling water and stir well. Add ½ cup ice cold water and mix until combined.
  • Pour the blue Jell-O over the cheesecake mixture in the pan and refrigerate until set.
  • Once the blue layer is set, prepare the red Jell-O by dissolving the powder in ½ cup boiling water and adding ½ cup ice cold water.
  • Carefully pour the red Jell-O over the blue layer and return to the refrigerator until fully set.
  • Once set, top with remaining cheesecake mixture and smooth out. Chill until ready to serve.
  • Garnish with Cool Whip and Cadbury Pastel Mini Eggs if desired before slicing and serving.
