Ingredients
Puff corn or Corn Pops cereal
Mini pretzels
Unsalted butter
Light brown sugar
Light corn syrup
Salt
Baking soda
Vanilla extract
White chocolate chips or almond bark or candy melts
Pastel spring M&M’s
Easter sprinkles
Instructions
- Preheat your oven to 250°F (121°C) and line a baking sheet with parchment paper.
- In a saucepan over medium heat, melt the unsalted butter, then add the light brown sugar, light corn syrup, and salt. Stir until the mixture comes to a boil.
- Once boiling, reduce heat and let it simmer for about 4-5 minutes without stirring.
- Remove from heat and stir in the baking soda and vanilla extract. The mixture will foam up.
- In a large bowl, combine the puff corn and mini pretzels. Pour the caramel sauce over the mixture and stir until everything is well coated.
- Spread the mixture evenly on the prepared baking sheet and bake for 30 minutes, stirring every 10 minutes.
- Once baked, remove from the oven and allow it to cool completely.
- Drizzle the melted white chocolate or almond bark over the cooled mix and sprinkle with pastel M&M’s and Easter sprinkles.
- Let the chocolate set, break into pieces, and enjoy your Easter snack mix!
