Ingredients
Biscoff cookies
Strong coffee or espresso
Mascarpone cheese
Biscoff cookie butter
Sugar
Heavy cream
Salt
Vanilla
Cocoa powder
Instructions
- Brew strong coffee or espresso and let it cool.
- In a mixing bowl, combine mascarpone cheese, Biscoff cookie butter, and a small amount of sugar until smooth.
- In another bowl, whip the chilled heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Quickly dip Biscoff cookies in the coffee and layer them in a serving dish.
- Spread a layer of the mascarpone mixture over the cookies.
- Repeat the layers until all ingredients are used, finishing with the mascarpone on top.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, dust with cocoa powder if desired.
Notes
For a cheesecake-like flavor, cream cheese can be used instead of mascarpone. You can adjust the sweetness by adding more or less sugar based on your preference.
