These Easy Chocolate Cheesecake Bars are a chocolate lover’s dream, featuring a rich chocolate cheesecake filling on a crunchy Oreo cookie crust, finished off with a silky chocolate ganache.
Ingredients
1 regular full-size package Oreo cookies
crushed into fine crumbs
8 tablespoons unsalted butter
melted
12 ounces bittersweet chocolate
coarsely chopped
1 and 1/2 pounds full-fat cream cheese
at room temperature
1 cup granulated sugar
1/4 cup light brown sugar
packed
2 tablespoons unsweetened natural cocoa powder
4 large eggs plus 2 large egg yolks
at room temperature
1 cup heavy cream
at room temperature
2 teaspoons vanilla extract
16 ounces semi-sweet chocolate
finely chopped
1 and 1/4 cups heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper.
- In a mixing bowl, combine the crushed Oreo cookies and melted butter until well blended, then press the mixture into the bottom of the prepared pan to form the crust.
- In a heatproof bowl, melt the bittersweet chocolate over a double boiler or in the microwave in short bursts, stirring until smooth.
- In a large mixing bowl, beat the cream cheese, granulated sugar, brown sugar, and cocoa powder until smooth and creamy.
- Add the melted chocolate to the cream cheese mixture and mix until combined.
- Add the eggs and egg yolks one at a time, mixing well after each addition, followed by the heavy cream and vanilla extract.
- Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
- Bake in the preheated oven for 30 minutes, or until the edges are set and the center is slightly jiggly.
- Allow to cool completely in the pan, then refrigerate for at least 4 hours or overnight.
- For the ganache, heat the heavy cream until steaming and pour it over the finely chopped semi-sweet chocolate. Let sit for a few minutes, then stir until smooth.
- Once the cheesecake is chilled, pour the ganache over the top and spread evenly. Chill again for at least 30 minutes before slicing.
Notes
For best results, let the cheesecake bars chill overnight to allow the flavors to meld together. Use high-quality chocolate for richer flavor.
