Ingredients

1/2 cup rainbow jimmies for the cake batter

1 cup water

1/2 cup vegetable oil

3 large whole eggs

2 tablespoons canned frosting white

vanilla

or cream cheese

40 ounces vanilla melting chocolate or almond bark divided

pastel colored food coloring gels such as yellow

pink

purple

green

and blue

Instructions

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a large bowl, mix the cake mix, water, vegetable oil, and eggs until well combined.
  • Fold in the rainbow jimmies to the batter.
  • Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick inserted comes out clean.
  • Allow the cake to cool completely before crumbling it into a large bowl.
  • Mix in the frosting until the cake crumbs are fully coated and can be shaped into balls.
  • Form the mixture into small balls, place them on a baking sheet, and refrigerate for 30 minutes to set.
  • Melt the vanilla melting chocolate or almond bark according to package instructions and divide into separate bowls for coloring.
  • Add pastel food coloring gels to each bowl and stir until well combined.
  • Dip each cake pop stick into the chocolate and insert it into a cake ball.
  • Dip each cake pop into the colored chocolate, ensuring it’s completely coated.
  • Sprinkle with Easter sprinkles before the chocolate sets.
  • Let the pops cool completely in a styrofoam block or cake pop holder.
