Ingredients
2 cups All-Purpose Flour
3 tablespoon Espresso Powder
2 teaspoon Cornstarch
1 teaspoon Baking Soda
¼ teaspoon Salt
½ cup Butter
softened to room temperature
½ cup Golden Brown Sugar
½ cup Granulated White Sugar
2 Eggs
2 teaspoon Vanilla Extract
1 cup Semisweet Chopped Chocolate Chunks
Flaky Sea Salt optional
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, espresso powder, cornstarch, baking soda, and salt.
- In another bowl, beat the softened butter, golden brown sugar, and granulated white sugar until creamy and well combined.
- Add the eggs and vanilla extract to the butter mixture and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped chocolate chunks.
- Scoop dough balls onto the prepared baking sheet, spacing them evenly. If desired, sprinkle a little flaky sea salt on top of each cookie.
- Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For an extra espresso kick, you can add more espresso powder to the dough. Store cookies in an airtight container for up to a week.
