2 teaspoon Cornstarch

1 teaspoon Baking Soda

½ cup Butter

softened to room temperature

½ cup Golden Brown Sugar

½ cup Granulated White Sugar

2 Eggs

2 teaspoon Vanilla Extract

1 cup Semisweet Chopped Chocolate Chunks

Flaky Sea Salt optional


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, espresso powder, cornstarch, baking soda, and salt.
  • In another bowl, beat the softened butter, golden brown sugar, and granulated white sugar until creamy and well combined.
  • Add the eggs and vanilla extract to the butter mixture and mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped chocolate chunks.
  • Scoop dough balls onto the prepared baking sheet, spacing them evenly. If desired, sprinkle a little flaky sea salt on top of each cookie.
  • Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
