These Easy Gooey Marshmallow Cookies are soft, chewy, and packed with chocolate and marshmallows, making them a delightful treat everyone will love.
Ingredients

2 ⅔ cup Flour
1 teaspoon Baking Powder
½ teaspoon Salt
1 cup Butter softened
½ cup Granulated Sugar
¾ cup Brown Sugar
2 Eggs
1 teaspoon Vanilla Extract
9 Marshmallows
½ cup Semi Sweet Chocolate Chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, baking powder, and salt, then set aside.
- In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips and cut marshmallows.
- Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers should look soft and slightly underbaked.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra gooey cookies, be careful not to overbake. You can also add extra chocolate chips if desired.
