This Easy Healthy Ground Turkey Zucchini Casserole Recipe is perfect for a quick dinner, packed with protein and veggies to satisfy your cravings while keeping it light and healthy.
Ingredients
1 pound (450g) lean (93%) ground turkey
3 cups shredded medium zucchini (about 2 medium zucchinis)
1 small yellow onion
diced
2 cloves garlic
minced
1 can (14.5 oz / 410g) diced tomatoes
no-salt-added preferred
1 cup (113g) low-fat shredded mozzarella cheese
2 large eggs
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and add diced onion and minced garlic. Sauté until soft and fragrant.
- Add ground turkey to the skillet and cook until browned. Season with salt, pepper, and Italian seasoning.
- Stir in the shredded zucchini and diced tomatoes and cook for an additional 5 minutes.
- In a bowl, whisk together the eggs and add to the turkey mixture. Mix well.
- Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
Notes
Feel free to add other vegetables or spices to customize the casserole to your taste. Leftovers can be stored in the fridge for up to 3 days.
