Ingredients

1 pound (450g) lean (93%) ground turkey

3 cups shredded medium zucchini (about 2 medium zucchinis)

1 small yellow onion

diced

2 cloves garlic

minced

1 can (14.5 oz / 410g) diced tomatoes

no-salt-added preferred

1 cup (113g) low-fat shredded mozzarella cheese

2 large eggs

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat and add diced onion and minced garlic. Sauté until soft and fragrant.
  • Add ground turkey to the skillet and cook until browned. Season with salt, pepper, and Italian seasoning.
  • Stir in the shredded zucchini and diced tomatoes and cook for an additional 5 minutes.
  • In a bowl, whisk together the eggs and add to the turkey mixture. Mix well.
  • Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  • Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.

Notes
