Ingredients
1½ cups all-purpose flour
1½ cups granulated sugar
½ teaspoon salt
1 cup unsalted butter softened
4 large eggs room temperature
2 tablespoons lemon zest
⅓ cup fresh lemon juice
1 teaspoon vanilla extract
1 cup powdered sugar
2–3 tablespoons fresh lemon juice for glaze
1 tablespoon lemon zest for glaze
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the lemon zest, lemon juice, and vanilla extract until fully combined.
- In another bowl, whisk together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the lemon mixture, mixing until just combined.
- Pour the batter into the prepared baking pan, smoothing it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean.
- While the brownies are cooling, prepare the glaze by whisking together powdered sugar, lemon juice, and lemon zest until smooth.
- Drizzle the glaze over the cooled brownies, allow it to set, then slice into squares and enjoy!
Notes
For a more intense lemon flavor, use freshly squeezed lemon juice and zest from more lemons. These brownies are best enjoyed the same day, but can be stored in an airtight container for up to 3 days.
