Baby spinach

Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the extra virgin olive oil over medium heat and sauté minced garlic until fragrant.
- Add the baby spinach and cook until wilted.
- Stir in the ricotta, grated Parmesan cheese, and the zest and juice of the lemon, mixing well.
- Combine the cooked pasta with the spinach and ricotta mixture, tossing until coated.
- Season with salt and pepper to taste. Serve warm.
Notes
Feel free to add grilled chicken or shrimp for extra protein. You can also substitute kale for spinach if desired.
