Description
Easy No-Bake Samoa Cookies are a quick and indulgent dessert inspired by classic Samoa flavors—rich caramel, toasted coconut, and smooth chocolate layered over buttery shortbread cookies. No oven required, making them perfect for busy days, parties, or a fun kitchen activity with kids.
Ingredients
Scale
- 1 package fudge stripe shortbread cookies (about 20–24 cookies)
- 1 (11 oz) package caramel bits
- 3 tablespoons heavy cream
- 2 cups toasted coconut
- 2 squares chocolate CandiQuik (or melting chocolate)
Instructions
- Line a baking sheet with parchment paper and arrange the shortbread cookies in a single layer.
- In a small saucepan over low heat, melt caramel bits with heavy cream, stirring constantly until smooth.
- Spoon or drizzle the warm caramel over each cookie.
- Immediately sprinkle toasted coconut over the caramel layer, pressing gently so it sticks.
- Melt chocolate CandiQuik according to package instructions until smooth.
- Drizzle chocolate over the cookies in a zig-zag pattern.
- Refrigerate for 30–60 minutes until set.
Notes
- Toast coconut lightly in a pan for extra flavor and crunch.
- Work quickly when adding caramel so it doesn’t harden before adding coconut.
- Store in the fridge for best texture and freshness.
- Can be frozen for up to 2 months in an airtight container.
