Description

This Easy One Pot Jambalaya with Shrimp and Sausage is a flavorful and hearty dish packed with Cajun spices, succulent shrimp, and smoky sausage, all cooked in one pot for a quick and easy meal.

1 Tbsp olive oil

8 oz andouille sausage sliced ¼-inch thick

1 medium yellow onion diced

2 celery ribs diced

1 green bell pepper diced

1 red bell pepper diced

3 cloves garlic minced

1½ tsp Cajun seasoning no-salt-added

½ tsp dried thyme

½ tsp smoked paprika

⅛ tsp cayenne pepper optional

1 cup long-grain white rice rinsed

14.5 oz can fire-roasted diced tomatoes

2½ cups low-sodium chicken broth

1 bay leaf

1 lb large shrimp peeled & deveined 26/30 count

¼ cup chopped fresh parsley

1 Tbsp fresh lemon juice

Salt & black pepper to taste


Instructions

  • In a large pot, heat olive oil over medium heat. Add the sliced andouille sausage and cook for about 5 minutes until browned.
  • Add the diced onion, celery, green bell pepper, red bell pepper, and minced garlic. Sauté for an additional 5 minutes until the vegetables are softened.
  • Stir in the Cajun seasoning, dried thyme, smoked paprika, and optional cayenne pepper, cooking for 1 minute until fragrant.
  • Add the rinsed rice, fire-roasted diced tomatoes, chicken broth, and bay leaf. Stir to combine, then bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid has been absorbed.
  • Fold in the shrimp, cover, and cook for another 5 minutes until the shrimp are pink and cooked through.
  • Remove from heat, stir in chopped parsley, fresh lemon juice, and season with salt and black pepper to taste. Serve hot.

Notes

Feel free to customize your jambalaya by adding other proteins like chicken or adjusting the spiciness to your preference. This dish is perfect for leftovers and tastes even better the next day.
