Instructions
- In a bowl, mix the chia seeds, milk, 3 tablespoon maple syrup, and vanilla extract. Stir well and let sit for about 10 minutes until it thickens.
- Meanwhile, combine the pumpkin puree, greek yogurt, remaining 3 tablespoon maple syrup, and a pinch of salt in another bowl. Mix until smooth.
- Once the chia pudding has thickened, layer it in serving glasses with the pumpkin cream. Start with a layer of chia pudding, followed by pumpkin cream, and repeat.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
