This Easy Shrimp Casserole is a quick and delicious meal perfect for busy weeknights. With succulent shrimp, creamy mayonnaise, and cheesy goodness, it’s a family favorite!
Ingredients
2 pounds large shrimp (21–24 count)
peeled and deveined
1 tablespoon Old Bay seasoning
plus 1 tablespoon salt for cooking water
2/3 cup mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 tablespoon butter
plus more to grease the pan
1/2 cup panko bread crumbs
4 ounces shredded mozzarella cheese
4 ounces shredded medium cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease a casserole dish with butter.
- In a large pot, bring water to a boil, add 1 tablespoon of salt and Old Bay seasoning, then add the shrimp. Cook until just pink, about 3-5 minutes, then drain and set aside.
- In a mixing bowl, combine mayonnaise, garlic powder, and pepper. Add the cooked shrimp and mix until shrimp are well-coated.
- Transfer the shrimp mixture to the greased casserole dish and spread it evenly.
- In a separate bowl, mix panko bread crumbs with melted butter. Sprinkle this mixture over the shrimp.
- Top with shredded mozzarella and cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Remove from oven, let it sit for a few minutes, serve warm, and enjoy!
Notes
For added flavor, consider mixing in some chopped green onions or a dash of hot sauce before baking.
