Ingredients
2 lbs beef chuck roast
trimmed
1 tablespoon olive oil
room temperature
1 medium onion
diced
2 cloves garlic
minced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons water
4 slices of sandwich bread
toasted
1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium-high heat, heat the olive oil. Sear the beef chuck roast on all sides until browned.
- Transfer the seared roast to a slow cooker. Add the diced onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, salt, and black pepper.
- Cover and cook on low for 6-8 hours or until the beef is tender and easily shreds with a fork.
- Once cooked, remove the beef from the slow cooker and shred using two forks.
- In a small bowl, mix cornstarch and water until smooth. Stir this mixture into the slow cooker to thicken the broth. Cook for an additional 15 minutes.
- To serve, place shredded beef on a slice of toasted bread, top with mozzarella cheese, and spoon some of the thickened broth over the top. Enjoy!
Notes
For added flavor, consider adding your favorite vegetables to the slow cooker along with the beef. Serve with extra toasted bread for dipping.
