1 large egg

1 teaspoon ground cinnamon

⅓ cup granulated sugar

2 tablespoons ground cinnamon

4 ounces white chocolate

2 tablespoons eggnog

1 tablespoon dark rum

¼ teaspoon freshly grated nutmeg

pinch of salt


Instructions

  • In a large mixing bowl, cream together the unsalted butter, light brown sugar, and white granulated sugar until light and fluffy.
  • Add in the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together the all-purpose flour, kosher salt, baking soda, cream of tartar, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Chill the dough in the refrigerator for 30 minutes.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the granulated sugar and ground cinnamon for rolling.
  • Scoop out tablespoon-sized portions of the chilled dough, roll them into balls, and then roll them in the cinnamon-sugar mixture.
  • Place the dough balls on the prepared baking sheet. Use your thumb to make an indentation in the center of each ball.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • While cookies bake, prepare the eggnog ganache by heating the white chocolate, eggnog, dark rum (if using), freshly grated nutmeg, and a pinch of salt in a heatproof bowl over simmering water until melted and smooth.
  • Remove cookies from the oven and let them cool slightly before filling the centers with the eggnog ganache. Allow a setting time of about 30 minutes before serving.

Notes

For an extra festive touch, try adding a sprinkle of nutmeg on top of the ganache before it sets.
