Ingredients
2 sheets puff pastry
thawed
6 ounces cream cheese
softened
3 tablespoons powdered sugar
1 teaspoon vanilla extract
2 medium apples
thinly sliced (Honeycrisp or Pink Lady)
1/4 cup brewed espresso
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1 egg
beaten (for egg wash)
1/4 cup caramel sauce
for drizzling
2 tablespoons pearl sugar or crushed nuts (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Roll out the thawed puff pastry sheets on a lightly floured surface and cut them into squares.
- Place a spoonful of the cream cheese mixture in the center of each pastry square.
- Top the cream cheese with thin apple slices.
- In a small bowl, mix the brewed espresso, brown sugar, and ground cinnamon, then drizzle a little over the apples.
- Fold the pastry corners towards the center to enclose the filling and brush the tops with the beaten egg.
- Place the pastries on a baking sheet lined with parchment paper and bake for 25-30 minutes until golden brown.
- Once baked, remove from the oven and drizzle with caramel sauce and sprinkle pearl sugar or nuts if desired.
