  • 2 large jalapeño peppers, halved lengthwise and seeded

  • 1 lb medium to large shrimp, peeled, deveined, and finely chopped

  • 8 oz full-fat cream cheese, softened

  • 1 cup shredded cheese (mozzarella & sharp cheddar blend)

  • 2 tablespoons Cajun seasoning

  • 3 cloves garlic, minced

  • ¼ cup chopped green onions or chives

  • 1 tablespoon olive oil

  • Salt and black pepper, to taste


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Slice jalapeños in half lengthwise and remove seeds and membranes for less heat. Brush lightly with olive oil.

  • In a bowl, combine chopped shrimp, cream cheese, shredded cheese, Cajun seasoning, garlic, green onions, salt, and pepper. Mix until well combined.

  • Spoon the shrimp mixture generously into each jalapeño half.

  • Arrange stuffed jalapeños on the prepared baking sheet.

  • Bake for 15–20 minutes, or until the filling is bubbly and lightly golden.

  • Remove from oven and let cool slightly before serving.

Notes

  • Leave some jalapeño seeds for extra heat.

  • Pepper jack cheese adds even more spice.

  • For crispier tops, broil for 1–2 minutes at the end.
