1¼ cups (250g) granulated sugar divided

4 large eggs room temperature

2½ teaspoons vanilla extract

1¼ cups (156g) cake flour

1½ teaspoons baking powder

½ teaspoon salt

½ cup sour cream room temperature

2 tablespoons whole milk

2 tablespoons granulated sugar for topping

Powdered sugar for dusting optional

Fresh berries for serving


Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper.
  • In a large mixing bowl, cream together 1 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the cake flour, baking powder, and salt. Gradually add this to the butter mixture, alternating with the sour cream and milk, starting and ending with the flour mixture.
  • Pour the batter into the prepared cake pan and smooth the top. Sprinkle the remaining ¼ cup of granulated sugar evenly over the top.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Once cool, dust with powdered sugar if desired, and serve with fresh berries.
