Description

French Onion Scalloped Potatoes combine creamy layers of thinly sliced potatoes with rich flavors of cheese, garlic, and French onions for an irresistibly delicious side dish.


Ingredients

1 ½ pounds gold potatoes or baby Yukon potatoes

washed and thinly sliced (⅛ of an inch thick)

2 tablespoons butter

3 tablespoons flour

2 teaspoons garlic powder

2 cups milk

1 ½ cups shredded white sharp cheddar cheese

divided

½ packet ranch seasoning/dressing mix

salt and pepper to taste

optional: ½ red onion

thinly sliced

1 cup crispy French onions


Instructions

  • Preheat your oven to 375 degrees F (190 degrees C).
  • In a medium saucepan, melt the butter over medium heat. Stir in the flour and garlic powder, cooking for about a minute to create a roux.
  • Gradually whisk in the milk, cooking until the mixture thickens. Remove from heat and stir in 1 cup of cheddar cheese and ranch seasoning until smooth.
  • In a greased baking dish, layer half of the sliced potatoes, sprinkle with salt and pepper, and layer half of the optional red onions.
  • Pour half of the cheese sauce over the first layer, then repeat with the remaining potatoes, seasonings, red onions, and cheese sauce.
  • Cover with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle the remaining cheddar cheese and crispy French onions on top, and bake for an additional 15 minutes or until golden and bubbly.
  • Let it rest for a few minutes before serving.

Notes

For an extra kick of flavor, feel free to use the whole packet of ranch seasoning. You can also garnish with fresh herbs like parsley or chives before serving.
