Ingredients
2 lbs beef chuck
cut into 1.5-inch cubes
6 slices thick-cut bacon
diced
1 large yellow onion
chopped
2 carrots
peeled and sliced
4 cloves garlic
minced
2 tbsp tomato paste
3 tbsp all-purpose flour
2 cups dry red wine
2 cups beef stock
1 bay leaf
3 sprigs fresh thyme
1 lb cremini mushrooms
halved
12 pearl onions
peeled
2 tbsp butter
1 tbsp olive oil
Salt and pepper to taste
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
- Season the beef cubes with salt and pepper, then brown them in the bacon fat in batches. Remove and set aside.
- Add the chopped onion, carrots, and garlic to the pot. Cook until softened, about 5 minutes.
- Stir in the tomato paste and flour, cooking for another minute to combine.
- Pour in the red wine, scraping up any browned bits on the bottom of the pot. Bring to a simmer.
- Add the beef back to the pot along with the beef stock, bay leaf, and thyme. Bring to a boil, then reduce to a simmer.
- Cover and cook for 1.5 to 2 hours, until the beef is tender.
- In the last 30 minutes, add the mushrooms and pearl onions.
- Stir in butter before serving and adjust seasoning with salt and pepper if necessary.
Notes
For extra depth of flavor, allow the stew to sit overnight in the refrigerator and reheat before serving.
