Indulge in the delightful layers of Fresh Raspberry Tiramisu, a refreshing twist on the classic Italian dessert, featuring luscious raspberry jam, creamy mascarpone filling, and tangy raspberry syrup.
Ingredients
500 g frozen raspberries
100 g granulated sugar
1 tablespoon lemon juice
100 g granulated sugar
120 g water
30 g frozen raspberries
3 tablespoon limoncello optional
450 g mascarpone cheese cold
120 g powdered sugar
2 tablespoon lemon juice
1 teaspoon vanilla paste
480 g heavy cream cold
25 ladyfinger cookies
Fresh raspberries and lemon slices for decoration
Instructions
- In a saucepan, combine frozen raspberries, 100 g granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally, until the raspberries break down. Remove from heat and let cool.
- In another pot, combine 100 g sugar, 120 g water, and 30 g frozen raspberries. Bring to a simmer and cook until sugar is dissolved. Add limoncello if using, and cool.
- In a mixing bowl, whisk together cold mascarpone cheese, powdered sugar, lemon juice, and vanilla paste until smooth.
- In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
- To assemble, quickly dip each ladyfinger in the raspberry syrup and layer them in the bottom of a serving dish. Spread half of the raspberry jam over the ladyfingers, followed by half of the mascarpone filling.
- Repeat the layers with the remaining ladyfingers, raspberry jam, and mascarpone filling. Smooth the top and refrigerate for at least 4 hours or overnight to set.
- Before serving, garnish with fresh raspberries and lemon slices for decoration.
Notes
For a more intense raspberry flavor, feel free to add additional raspberry jam on top before serving.
