Description

This Fresh Rhubarb Pie is a delightful dessert showcasing the tangy sweetness of fresh rhubarb, combined with a buttery crust. It’s an irresistible treat for any occasion.

Ingredients

Scale

1 ⅓ cups white sugar

6 tablespoons all-purpose flour

1 (14.1 ounce) package double-crust pie pastry

thawed

4 cups freshly chopped rhubarb

1 tablespoon butter

Instructions

  • Preheat oven to 425°F (220°C).
  • In a large bowl, mix together the sugar and flour. Add the fresh rhubarb and toss to coat.
  • Roll out half of the pie pastry and place it in a pie pan. Fill with the rhubarb mixture, and dot with butter.
  • Cover with the top pie crust, seal the edges, and cut small slits in the top to allow steam to escape.
  • Bake in the preheated oven for 30–35 minutes, or until the crust is golden brown and the filling is bubbly.
  • Allow the pie to cool before slicing. Serve warm or at room temperature.

Notes

For a sweeter pie, feel free to adjust the amount of sugar to your taste. Serve with vanilla ice cream for an extra treat!
