1 ⅓ cups white sugar
6 tablespoons all-purpose flour
1 (14.1 ounce) package double-crust pie pastry
thawed
4 cups freshly chopped rhubarb
1 tablespoon butter
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, mix together the sugar and flour. Add the fresh rhubarb and toss to coat.
- Roll out half of the pie pastry and place it in a pie pan. Fill with the rhubarb mixture, and dot with butter.
- Cover with the top pie crust, seal the edges, and cut small slits in the top to allow steam to escape.
- Bake in the preheated oven for 30–35 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool before slicing. Serve warm or at room temperature.
Notes
For a sweeter pie, feel free to adjust the amount of sugar to your taste. Serve with vanilla ice cream for an extra treat!
