Description
Garlic Parmesan Duchess Potatoes are a creamy and flavorful twist on classic mashed potatoes, perfectly baked to a golden finish, ideal for any occasion.
Ingredients
2 1/2 lbs Yukon gold potatoes
peeled and diced into 1 1/2-inch portions
Salt and freshly ground black pepper
6 Tbsp butter
divided
4 cloves garlic
finely minced
3 – 4 Tbsp half and half
1/2 cup (slightly packed) finely shredded parmesan cheese
4 large egg yolks
Minced fresh parsley
for garnish (optional)
Finely grated parmesan
for serving (optional)
Instructions
- In a large pot, add the diced Yukon gold potatoes and cover with cold water. Season with salt and bring to a boil over high heat. Cook until the potatoes are tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and the minced garlic, mashing everything together until smooth.
- Mix in the half and half, parmesan cheese, and egg yolks, stirring until well combined. Season with additional salt and pepper to taste.
- Preheat your oven to 400°F (200°C). Transfer the potato mixture to a piping bag or use two spoons to shape them into mounds on a baking sheet lined with parchment paper.
- Melt the remaining 2 tablespoons of butter and brush it over the tops of the shaped potatoes. Bake in the preheated oven for 15-20 minutes or until they are golden brown.
- Serve warm, garnished with minced parsley and additional parmesan cheese if desired.
Notes
For extra flair, use a star-shaped piping tip to create beautiful duxelles. These are best served fresh out of the oven.
