Ingredients
2 pounds Yukon Gold potatoes
cut into 1-inch-thick slices
2 tablespoons butter
melted
2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh thyme
¾ teaspoon salt
½ teaspoon ground pepper
3 large cloves garlic
grated
1 cup low-sodium vegetable broth or chicken broth
¼ cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine melted butter, olive oil, thyme, salt, pepper, and grated garlic. Mix well.
- Add the sliced potatoes to the bowl, tossing to coat each slice with the mixture.
- Arrange the potatoes in a single layer in a baking dish and pour the broth around them.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle Parmesan cheese over the potatoes, and return to the oven for an additional 15 minutes or until golden and tender.
