Ingredients
3–4 large green plantains
1/2 cup chicharrones
3–4 cloves garlic
1/4 cup olive oil
1/4 cup chicken broth

1 lb large shrimp
4–5 cloves garlic
2 tablespoons olive oil
1 tablespoon fresh lime juice
1/4 cup fresh cilantro
1/4 teaspoon red pepper flakes

Instructions
- Peel the green plantains and cut them into 1-inch pieces.
- In a large pot, heat olive oil over medium heat and fry the plantains until golden brown, about 4-5 minutes per side.
- Remove the plantains from the oil, place them in a large bowl, and mash with chicharrones, minced garlic, chicken broth, and salt until well combined.
- In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the shrimp, lime juice, cilantro, red pepper flakes, salt, and black pepper to the pan and cook until the shrimp are pink and opaque, about 4-5 minutes.
- Serve the crispy mofongo topped with the zesty garlic shrimp. Enjoy!
Notes
For extra flavor, allow the mofongo mixture to rest for a few minutes before serving. Feel free to adjust the amount of garlic and red pepper flakes to suit your taste.
