This Garlicky Potato Galette recipe features crispy and flavorful layers of Yukon Gold potatoes, sprinkled with herbs and cheese for a delicious side dish.
Ingredients
2 pounds medium unpeeled Yukon Gold potatoes (scrubbed and sliced about ⅛-inch thick)
1/4 cup grated Parmesan cheese
1 tablespoon cornstarch
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons extra-virgin olive oil
3 tablespoons unsalted butter (melted
divided use)
1/2 cup finely chopped sweet onion
3 large cloves garlic (minced)
1 tablespoon fresh thyme (chopped)
3/4 teaspoon fresh rosemary (chopped)
3/4 teaspoon lemon zest
Instructions
- Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
- In a large bowl, combine the sliced Yukon Gold potatoes, Parmesan cheese, cornstarch, salt, pepper, olive oil, melted butter (reserve some for brushing), sweet onion, garlic, thyme, rosemary, and lemon zest.
- Toss the mixture well until all potatoes are evenly coated.
- Layer half of the potato mixture on the prepared baking sheet in a circular pattern, forming a flat disk.
- Top with the remaining potato mixture and gently press down to compact the layers.
- Brush the top with the reserved melted butter.
- Bake in the preheated oven for about 30 minutes, or until the top is golden brown and the potatoes are tender.
- Allow to cool slightly before slicing into wedges. Garnish with extra thyme and rosemary before serving.
Notes
Feel free to experiment with different types of cheese or add additional herbs for variation. Make sure to slice the potatoes uniformly for even cooking.
