  • 1 1/2 cups (319g) light or dark brown sugar, packed

  • 2 large eggs, room temperature

  • 1/2 cup (170g) molasses

  • 1 cup (227g) water

Glaze

  • 1/3 cup (74g) rum or water

  • 1/2 teaspoon gingerbread spice

  • 3/4 cup (149g) granulated sugar


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.

  • In a bowl, whisk flour, gingerbread spice, salt, baking soda, and baking powder.

  • In a separate bowl, cream butter and brown sugar until light and fluffy.

  • Beat in eggs, then mix in molasses.

  • Gradually add dry ingredients, alternating with water, mixing until just combined.

  • Pour batter into prepared Bundt pan and smooth the top.

  • Bake for 50–60 minutes, or until a toothpick inserted comes out clean.

  • Cool for 10 minutes, then invert onto a wire rack.

  • For the glaze, heat rum (or water), sugar, and spice until sugar dissolves.

  • Drizzle glaze over the cooled cake before serving.

Notes

  • Do not overmix the batter to keep the cake tender.
