Ingredients
2 cups cooked white rice fully cooled
1 cup crushed pineapple well drained
½ cup mini marshmallows
½ cup heavy whipping cream
3 tablespoons powdered sugar
½ teaspoon vanilla extract
¼ teaspoon salt
¼ cup sweetened shredded coconut
2 tablespoons maraschino cherries finely chopped (optional)
Extra coconut or cherries for topping optional
Instructions
- In a large bowl, combine the cooked white rice and crushed pineapple. Mix well.
- Add the mini marshmallows to the rice mixture and stir to combine.
- In another bowl, whip the heavy cream until it starts to thicken. Add the powdered sugar, vanilla extract, and salt, continuing to whip until soft peaks form.
- Gently fold the whipped cream into the rice mixture until fully incorporated.
- Stir in the sweetened shredded coconut and chopped maraschino cherries, if using.
- Transfer the mixture to a serving dish and chill in the refrigerator for at least 30 minutes.
- Before serving, top with extra coconut or cherries if desired.
