Description
These Gluten Free Sugar Cookies are soft, chewy, and perfect for any occasion. With their sweet vanilla flavor and festive frosting, they will be a hit with everyone, gluten-free or not!
Ingredients
2 cups (280 g) all purpose gluten free flour blend
¾ teaspoon xanthan gum
¾ teaspoon baking powder
¼ teaspoon kosher salt
½ cup (100 g) granulated sugar
3 tablespoons (22 g) confectioners’ sugar
8 tablespoons (112 g) unsalted butter
1 (50 g) egg
1 teaspoon pure vanilla extract
10 tablespoons (140 g) unsalted butter for frosting
¼ cup (2 fluid ounces) milk
1 tablespoon pure vanilla extract for frosting
⅛ teaspoon kosher salt for frosting
2 teaspoons meringue powder
4 cups (460 g) confectioners’ sugar

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the gluten free flour, xanthan gum, baking powder, and salt.
- In another bowl, cream together the granulated sugar, confectioners’ sugar, and butter until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the creamed mixture, mixing until a dough forms.
- Scoop tablespoon-sized amounts of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- For the frosting, beat the butter in a bowl until creamy. Add the milk, vanilla extract, salt, and meringue powder, and mix until combined.
- Gradually add the confectioners’ sugar, mixing until smooth and spreadable. Optionally, mix in the seeds from a vanilla bean for extra flavor.
- Frost the cooled cookies and decorate with sprinkles if desired.
Notes
Make sure your gluten free flour blend contains xanthan gum, or add it separately. Store cookies in an airtight container to keep them fresh.
