Ingredients
1 cup sourdough discard (unfed)
1 1/4 cups all-purpose flour
1/4 cup plain yogurt or milk
1 egg
2 tbsp sugar
1/4 cup melted butter or oil
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar
1 1/2 tsp cinnamon
2 tbsp melted butter (for rolling)
3/4 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Instructions
- In a mixing bowl, combine sourdough discard, yogurt or milk, egg, sugar, and melted butter or oil.
- In another bowl, whisk together flour, baking powder, baking soda, and salt; then, gradually add to the wet ingredients to form a dough.
- Turn the dough out onto a floured surface and roll it into a rectangle.
- Brush the dough with melted butter, then sprinkle with cinnamon sugar (mix brown sugar and cinnamon in a bowl).
- Roll the dough tightly into a log and cut into bite-sized pieces.
- Place the cinnamon roll bites into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes until golden brown.
- While baking, mix powdered sugar, milk, and vanilla extract to create the glaze.
- Once baked, drizzle the glaze over the warm cinnamon roll bites and serve.
Notes
These cinnamon roll bites are best served warm and can be made ahead of time and reheated. Adjust the amount of glaze to your desired sweetness.
