Delightfully zesty and refreshing, these Grapefruit Bars are a perfect balance of sweet and tart, making them an ideal dessert for any occasion.

1 cup all-purpose flour
¼ cup powdered sugar
¼ tsp salt
½ cup butter (room temperature
cut into 8 pieces)
1 ½ cups granulated sugar
¼ cup all-purpose flour
4 large eggs
1 Tablespoon grapefruit zest
1 cup grapefruit juice (or a combination of grapefruit and lemon juice)
pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the 1 cup of flour, powdered sugar, and salt, then add the butter and mix until crumbly.
- Press the crust mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for 15-20 minutes or until lightly golden.
- In another bowl, whisk together the granulated sugar, ¼ cup of flour, and eggs until smooth.
- Stir in the grapefruit zest and juice, and add pink food coloring if desired.
- Pour the filling over the baked crust and bake for an additional 20-25 minutes, until the filling is set.
- Allow to cool completely before slicing into bars.
Notes
For a more intense flavor, use fresh grapefruit juice. You can also substitute half of the grapefruit juice with lemon juice for a different citrus twist.
