Description
Greek Beef Stuffed Onions (Salantourmasi) are a delightful dish featuring tender onions stuffed with a savory mixture of ground beef, rice, and herbs, all simmered in a flavorful tomato broth.
Ingredients
4 large yellow onions peeled
1/4 cup olive oil plus more for drizzling
1 pound ground beef divided
1 cup diced onion
1 teaspoon freshly ground black pepper
2 teaspoons kosher salt
1 pinch cayenne pepper
4 garlic cloves minced
1 teaspoon dried oregano
2 tablespoons tomato paste
3/4 cup white long grain rice
2 tablespoons red wine vinegar
1 1/2 cups chicken broth
1/3 cup crumbled Greek feta
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup chopped fresh oregano plus more for garnish
4 cups onion cooking water
2 cups tomato sauce
2 tablespoons chicken bouillon paste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the onions and scoop out the insides, reserving the onion flesh for the filling.
- In a skillet, heat 1/4 cup of olive oil over medium heat, then add the diced onion and sauté until soft.
- Add the ground beef to the skillet, breaking it apart, and cook until browned.
- Stir in the garlic, black pepper, salt, cayenne pepper, dried oregano, and tomato paste, cooking for another couple of minutes.
- Mix in the reserved onion flesh, rice, red wine vinegar, and chicken broth. Cook until the rice is tender, about 15 minutes.
- Remove from heat and fold in feta, parsley, mint, and oregano.
- Stuff the onion shells with the beef-rice mixture and place them upright in a baking dish.
- In a bowl, combine the onion cooking water, tomato sauce, and chicken bouillon paste, then pour around the stuffed onions in the dish.
- Drizzle a bit more olive oil on top of the stuffed onions and cover the dish with foil.
- Bake for 30-35 minutes until the onions are tender.
- Serve hot, garnished with additional fresh oregano.
Notes
For added flavor, you can let the stuffed onions marinate for a few hours before baking. Serve with a side of Greek salad for a complete meal.
