Description

This Greek Yogurt Chicken is a flavorful dish that combines marinated chicken with a creamy yogurt-based sauce, ensuring a moist and tender chicken with Mediterranean flair.

Ingredients

Scale

Plain Greek yogurt (1 cup

full-fat or 2%)

Olive oil (3 tablespoons)

Garlic (4 cloves

minced)

Lemon juice (1 tablespoon)

Lemon zest (1 teaspoon)

Dried oregano (1½ teaspoons)

Smoked paprika (1 teaspoon)

Ground cumin (½ teaspoon)

Salt (1 teaspoon)

Black pepper (½ teaspoon)

Boneless

skinless chicken breasts (4

about 650750 g)

Fresh parsley (optional garnish)

Lemon wedges (optional garnish)

Instructions

  • In a large bowl, combine the Greek yogurt, olive oil, minced garlic, lemon juice, lemon zest, dried oregano, smoked paprika, ground cumin, salt, and black pepper. Mix well to create the marinade.
  • Pat the chicken breasts dry with paper towels and add them to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to 4 hours to allow flavors to meld.
  • Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.
  • Place the marinated chicken breasts in the prepared baking dish, allowing any excess marinade to drip off.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  • Remove from the oven and let the chicken rest for 5 minutes. Serve garnished with fresh parsley and lemon wedges for squeezing over the top.

Notes

For a stronger flavor, consider marinating the chicken overnight. Serve alongside a fresh salad or roasted vegetables for a complete meal.
