Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs, buttermilk, vanilla extract, and a few drops of green food coloring to the creamed mixture, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the frosting by beating together the cream cheese and softened butter until smooth.
- Gradually add the powdered sugar and vanilla extract, and mix until well combined and fluffy.
- Frost the cooled cupcakes with the cream cheese frosting and add additional green food coloring if desired for decoration.
