1 tablespoon avocado oil

1½ cups chicken broth

4 ounces tomato sauce

½ teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon chicken bouillon

¼ teaspoon salt

1 pound ground beef

1 tablespoon chili powder

1 teaspoon ground cumin

¾ teaspoon salt

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried oregano

¾ cup mayonnaise

¼ cup sour cream

2 tablespoons lime juice

1 teaspoon honey

2 chipotle chiles in adobo sauce

1 teaspoon garlic powder

½ teaspoon smoked paprika

¼ teaspoon salt

8 large tortillas

2 cups Mexican Rice

1 pound taco meat

1 cup tortilla strips

¾ cup nacho cheese sauce

½ cup sour cream

½ cup chipotle mayo

1 cup Mexican cheese blend


Instructions

  • In a medium saucepan, heat avocado oil over medium heat. Add the rice and toast for 2-3 minutes.
  • Pour in chicken broth, tomato sauce, onion powder, garlic powder, chicken bouillon, and salt into the rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat, then add chili powder, ground cumin, salt, garlic powder, onion powder, and oregano. Cook for another 3-4 minutes until well mixed.
  • In a bowl, mix together mayonnaise, sour cream, lime juice, honey, chipotle chiles, garlic powder, smoked paprika, and salt for the chipotle mayo.
  • Warm tortillas slightly to make them pliable. Layer each tortilla with rice, taco meat, tortilla strips, nacho cheese, and Mexican cheese blend.
  • Fold the sides of the tortilla in and roll tightly into a burrito. Grill each burrito in a skillet over medium heat until golden brown and crispy on all sides, about 3-4 minutes per side.
  • Serve hot with sour cream and chipotle mayo on the side.
