  • 1 red bell pepper, thinly sliced
  • 2 cups broccoli florets, diced
  • 3/4 cup carrots, cut into matchsticks

Protein & Base:

  • 1 lb lean ground beef
  • 3 packages instant ramen noodles (seasoning discarded)

Sauce:

  • 2 teaspoons cornstarch
  • 3 tablespoons light soy sauce
  • 1/3 cup chicken broth
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon light brown sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce
  • 2 teaspoons sriracha (adjust to taste)
  • 1/4 teaspoon black pepper

Garnish:

  • Minced green onions
  • Sesame seeds

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add onion, garlic, and ginger. Sauté until fragrant.
  • Stir in bell pepper, broccoli, and carrots. Cook for 5–7 minutes until tender.
  • Push vegetables to one side and add ground beef. Cook until browned, breaking it apart.
  • Meanwhile, prepare ramen noodles according to package instructions (without seasoning). Drain and set aside.
  • In a bowl, whisk together all sauce ingredients until smooth.
  • Add cooked noodles to the skillet, then pour in the sauce. Toss everything together until well coated.
  • Cook for 2–3 minutes until the sauce thickens slightly.
  • Remove from heat and garnish with green onions and sesame seeds. Serve warm.
