- 1-inch ginger, grated
- 1 red bell pepper, thinly sliced
- 2 cups broccoli florets, diced
- 3/4 cup carrots, cut into matchsticks
Protein & Base:
- 1 lb lean ground beef
- 3 packages instant ramen noodles (seasoning discarded)
Sauce:
- 2 teaspoons cornstarch
- 3 tablespoons light soy sauce
- 1/3 cup chicken broth
- 2 teaspoons toasted sesame oil
- 1 tablespoon light brown sugar
- 1 tablespoon rice vinegar
- 2 tablespoons hoisin sauce
- 2 teaspoons sriracha (adjust to taste)
- 1/4 teaspoon black pepper
Garnish:
- Minced green onions
- Sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Stir in bell pepper, broccoli, and carrots. Cook for 5–7 minutes until tender.
- Push vegetables to one side and add ground beef. Cook until browned, breaking it apart.
- Meanwhile, prepare ramen noodles according to package instructions (without seasoning). Drain and set aside.
- In a bowl, whisk together all sauce ingredients until smooth.
- Add cooked noodles to the skillet, then pour in the sauce. Toss everything together until well coated.
- Cook for 2–3 minutes until the sauce thickens slightly.
- Remove from heat and garnish with green onions and sesame seeds. Serve warm.

- Adjust sriracha for desired spice level.
- Swap vegetables based on what you have (snap peas, mushrooms, or cabbage work well).
- Use low-sodium soy sauce for a lighter option.
