  • 1 lb ground chicken
  • 34 zucchini (about 4 cups), diced
  • ½ onion, sliced
  • ¼ tsp garlic powder
  • ½ tsp salt (divided)
  • ¼ tsp black pepper

For the Sauce

  • ½ cup coconut aminos (or low-sodium soy sauce)
  • ⅓ cup water
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • 2 tsp minced garlic
  • ½ tsp ground ginger
  • ½ tsp chili powder
  • 2 tsp cornstarch or arrowroot powder

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add zucchini and onion; sauté 5–7 minutes until slightly tender.
  3. Season with garlic powder, salt, and pepper. Remove vegetables to one side of pan.
  4. Add ground chicken to the empty space in the skillet.
  5. Season with remaining salt and pepper. Cook until browned and fully cooked (about 6–8 minutes).
  6. Mix chicken and vegetables together in the pan.
  7. In a small bowl, whisk together all sauce ingredients.
  8. Pour sauce into skillet and stir well.
  9. Cook 2–3 minutes until sauce thickens and coats everything evenly.
  10. Serve hot.
